Château du Moulin-à-Vent | Le Pigeou

[/piʒu:/] – Vigneron vocabulary – The “pigeou” is the tool used to process the “pigeage”, or punch down. It is a 2-meter long wooden or stainless steel rod with a flared end, used to crush down the “chapeau”, or cap, to extract color and tannins.

The “pigeage” is one of the method used during the vinification process, alongside the “remontage”. Witness the vinification process filmed with GoPro at Château du Moulin-à-Vent.
