“Domaine Laroche’s wines are aged within the Obediencerie, a medieval monastery near the abbey of Saint Martin de Tours, which is named for the patron saint of Chablis. Here, winemaker Gregory Viennois blends this iridescent grand-cru white, whose razor-like acidity cuts through the rich flavors of a cold slab of rare beef tenderloin dressed with a dollop of homemade tarragon mayonnaise.”
